International Recipe: Lamb Chops with Yogurt Mint Sauce

Lamb Chops with Yogurt Mint Sauce
Ingredients:
  • 4 (6-ounce) lamb chops
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt - divided use
  • 1/4 teaspoon ground black pepper - divided use
  • 1 (8-ounce) container plain yogurt
  • 1 lemon, juiced
  • 1 tablespoon chopped fresh mint
  • 1/4 teaspoon paprika
Procedures:
  1. Preheat broiler.
  2. Brush lamb chops on both sides with olive oil and season with half the salt and half the pepper; place on a broiler pan. Broil for about 4 minutes per side for medium-rare.
  3. Meanwhile mix together remaining salt and pepper, yogurt, lemon juice, mint and paprika; blend well.
  4. Serve lamb chops drizzled with yogurt sauce.
Makes 6 servings.
