Lamb Chops with Yogurt Mint Sauce
Ingredients:
- 4 (6-ounce) lamb chops
- 2 tablespoons olive oil
- 1/2 teaspoon salt - divided use
- 1/4 teaspoon ground black pepper - divided use
- 1 (8-ounce) container plain yogurt
- 1 lemon, juiced
- 1 tablespoon chopped fresh mint
- 1/4 teaspoon paprika
- Preheat broiler.
- Brush lamb chops on both sides with olive oil and season with half the salt and half the pepper; place on a broiler pan. Broil for about 4 minutes per side for medium-rare.
- Meanwhile mix together remaining salt and pepper, yogurt, lemon juice, mint and paprika; blend well.
- Serve lamb chops drizzled with yogurt sauce.
