International Recipe: Grilled Zucchini Slices

Grilled Zucchini Slices
Ingredients:
  • 4 medium zucchini, washed and dried, ends trimmed, unpeeled and sliced lengthwise 1/4-inch thick
  • 2 tablespoons butter, melted
  • 1 tablespoon olive or vegetable oil
  • 1 teaspoon fresh lemon juice
  • Kosher or sea salt and freshly ground pepper to taste
Procedures:
  1. In small bowl or cup, combine butter, olive oil and lemon juice. Brush zucchini slices with butter mixture.
  2. Cook prepared zucchini slices over medium-high to high heat on the grill for about 2 minutes per side or until vegetable turns golden brown.
  3. Remove from grill onto serving platter. Salt and pepper to taste and serve immediately.
Serves 4.
