Curried Beef Dinner
Ingredients:
- 1/4 pound mushrooms, sliced
- 1/2 cup chopped onion
- 2 tablespoons butter
- 2 cups beef broth
- 2 to 2 1/2 pounds beef cut into thin, short strips
- 2 tablespoons vegetable oil
- 1/2 teaspoon curry
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- Hot cooked rice for accompaniment
- Chow mein noodles for accompaniment
- In a large skillet saute sliced mushrooms and chopped onion in butter. Cook until tender, about 2 minutes, stirring constantly. Gradually add beef broth; cook over medium heat, stirring constantly until thickened and bubbly; set aside.
- In a large skillet brown chopped beef strips in oil. Cover and simmer for 10 minutes. Add the gravy mixture, curry, salt, and pepper; cover and simmer for 20 minutes, or until the beef is tender.
- Serve over rice and sprinkle with chow mein noodles.
