Dish Recipe: Cheddar Smashed Potatoes

Cheddar Smashed Potatoes
Ingredients:
  • 5 pounds red potatoes, washed and quartered
  • 1/4 cup butter, softened
  • 2 cups half-and-half
  • 1 cup (4 ounces) shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 bunch green onions, sliced thin
  • Salt and pepper to taste
Procedures:
  1. Place potatoes in a large pot, cover with water, bring to a simmer and cook until fork tender. Drain potatoes well and return to pot off of heat. Using a handheld masher, add butter and mix until melted. Mash in remaining ingredients and season with salt and pepper.
Makes 10 to 12 servings.
