Cheddar Smashed Potatoes
Ingredients:
- 5 pounds red potatoes, washed and quartered
- 1/4 cup butter, softened
- 2 cups half-and-half
- 1 cup (4 ounces) shredded cheddar cheese
- 1/2 cup sour cream
- 1 bunch green onions, sliced thin
- Salt and pepper to taste
- Place potatoes in a large pot, cover with water, bring to a simmer and cook until fork tender. Drain potatoes well and return to pot off of heat. Using a handheld masher, add butter and mix until melted. Mash in remaining ingredients and season with salt and pepper.
